Default Customized *starting* color for gradient shape?

Trying to make an arrow with color starting red and using a gradient to change into blue.



The arrow is blue by default, so "Format Shape", change "Fill" to "Gradient" and selecting red does the "blue-to-red" arrow just fine.

But I can't get "red-to-blue".

What am I missing here? Thanks.
