The file you have attached is not a pivot table - just a table. You can export the resource usage view to Excel as a pivot table using Visual Reports. What version of Project?

I am using MS Project 2016. I understand the file was not a pivot table, but it is the information I am looking to export. I couldn't find out how to do it in the visual reports.

You'll need to use a Visual Report based upon the Assignment Usage cube. Try the following:
1. Create a visual report selecting "Baseline Work report"
2. Set the level of usage to Days and click View to create the report.
3. Click the Assignment Usage tab in Excel to view the Pivot table.
4. In the Pivot Table field list - select Resources to add the display of resource names.
5. If necessary - drag the Resources to Rows and place it above the Tasks.
6. Drag the Weekly calendar from Filters to Columns and place above the summary values.
7. Turn off Baseline work and actuals.
8. Hide columns and/or rows as needed.
Regarding the lack of New template option - sorry - I don't know what is up with that.
I hope this helps.
