The easiest method would be to create the night calendar and assign it to resources who work nights. If then assign those resources to tasks - the tasks will shift to align with their calendars.

Take a look at the built-in Night Shift calendar as an example of calendars that span over mid-night. Let's say your schedule is 11:00 pm - 7:00 pm starting Sunday night.
For Sunday the working hours would be 11:00 pm - 12:00 am.
Monday 12:00 am - 7:00 am
11:00 pm - 12:00 am

The pattern established for Monday would run through Thursday morning.

You'd also need a "day shift calendar" from 6:00 am to 6:00 pm Monday through Friday. Assign that base calendar to resources who work days.
