Selecting cells is completely possible. Click the row number you want to change colour and select a colour by right clicking and choosing from the drop down for colour at the top of the menu.
you are correct it does not do it natively, although there are some VBS solutions that work. For Primavera, this does not do it either. It will change a WBS colour happily, but not a task.
