I agree with you that the MS project views system is a bit strange.
If I understand correctly how it works each view is associated to a table.
A more that one view can share the same table.
So I would guess this can be your problem.
Gantt chart view and yor newview are using the same table. So when you add/hide columns this is modified in the table definition. So no change when you select the other view.
You can create a new table when you are on your newview and then add/hide column. Then going back to your gantt view will bring back the original and not modified table.
I'm working with Project 2013, but I guess it should be similar in 2010.
