Does anyone know if there is an easy method to export email folders from one machine in order to import them to another?

You can use the Import and Export feature in Outlook. It is located in the File menu. You will want to save it as a Personal Folder File (.pst). Save it to your desktop. You will then need to copy the .pst file to the other machine and then import the .pst file into Outlook.
