Default

If I understand you correctly, every time you open Outlook, you get the box that asks for the Exchange settings correct? And you are trying to find the setup information that is in image 1?

If you go into your Control Panel, look for Mail. After clicking on Mail, click on email accounts.

In the box, if you have more than 1 account, select the one you want to be your default account (right now it is the Exchange account). Are you setting up a pop, IMAP or Exchange account? Once you highlight the default account, click on Set As Default. And to change the settings, highlight the account and select change.

Hopefully this helps you out some.
