Default AutoSave incoming messages in folders adhoc

Is it possible to create folders where incoming messages are saved, automatically on receipt, based on the "from" field?

Sure. This is largely what the Rules and Alerts tool is for. First, create the folder(s) that you want to move incoming mail to. Then, when you read a new message that you want automatically moved to the new folder, use the Action->Create Rule menu item to create a rule that does the move. Read the options carefully and experiment with what you want.

An interesting aside for this question is how do you prevent these folders from becoming huge? In my job, various programs may email me whenever a problem comes up. Using a rule, I move these emails to a separate folder and, using AutoArchive, I dump the contents of the folder when things get old in them. That way, the most recent messages are always in the folder to provide some history for the latest problem email.
