Default I want to use my installed Office apps

I appreciate having somewhere to come for help. Thank you. ‘New’ Outlook has gotten real old, real quick, and my patience has dried up. It’s not ‘New and Improved’, just new problems. 20 email signatures' logos disappeared, 44 rules were lit up in red ‘error’ and had to be created all over again, then couldn't be run all at once. I waited for a code that never arrived so that I could log into my MS account; the email address I used had stopped sending/ receiving at some point. Now I'm not permitted to set it up again, manually. I purchased and installed Office Pro when I built my pc 4 years ago, and those are the programs I want to use. Please help! tia
