Default New account defaults to 'Microsoft Exchange'

I deleted an 'outlook.com' account because it did not permit me to change my name. Whenever I sent an email my friends got an email from 'Address Service' and I wanted to change it to who I REALLY was!

So, I tried to create a new account, but the new account defaults to 'Microsoft Exchange' and the problem refused to go away.

So, I came here. Any ideas for me to clear this up? Thanks.

Incidentally, my name is Chris, not 'Address Service'
