Default MailTo link bringing up weird version of Outlook

I am making the switch to Chrome from FireFox after about 25 years of FireFox, and it ain't easy...

In Chrome i clicked a link to send an email, one that i believe starts with "MailTo:". There was a popup window to select what program i use to send emails, which is Outlook. There was one selection for Outook which actually said something like "New Outlook" which i selected as it was the only option showing Outlook. That which came up was not the Outlook i use.

Even when i go through Windows 11 | Settings | Apps | Default Apps and go to MailTo, this demented thing is the only Outlook available.

How do i
  1. cleanse "New Outlook" off of my computer and
  2. Reconnect to the Outlook i have been using for years?

May i also ask what idiot decided to come up with "Outlook" AND "New Outlook"???
