Default Colors in calendar

I am not using Exchange but need to color code my appointments. I once had someone set something up so that if I put certain symbols at the start of the appointment it would automatically change that appointment to a certain color based on the symbol. Unfortunately my computer crashed and I had to reinstall everything and lost that ability. Can someone tell me how to set that up again or another way to color code my appointments without using Exchange?

Outlook has categories. You can use the built-in ones of create your own to categorise and colour your entries.

Thank you gmayor I am aware of that feature but it's not available to me because I'm using IMAP accounts. That's why I need to figure out what this person did for me before. Thanks for the reponse.
