Default set rule for 2007 based on a from name

I'm getting spam email looking as if they come from H.samuel. I can keep marking them as junk mail but I guess they are coming from different e-mail addresses.

I have looked at How To's but none seem to be of help, could be me being thick. How do I set up a rule to move emails that look to be from H.samuel but aren't to my junk folder?
