Outlook delayed delivery sending emails but not saving them in sent folder but option to save a copy

Hello all.

strange issue I'm coming across as of late.
I use delay delivery almost everyday. It used to "save" a copy in my sent folder for review the following day.

The option to "save" is clicked and the email itself is making it to the "other side" but it is nowhere to be found on my side and it makes it hard to "review" if I don't have a copy.

any ideas? or maybe an option that Im missing?
