Default Since moving to office 365, I cannot add new categories in Outlook 2007

My office is still using Outlook 2007, but recently switched from using its own MS Exchange server, to using Office 365. During the switch my color categories disappeared, and I am no longer able to create a new category - the option is greyed out (see screenshot below). Any ideas if this can be fixed by something I can do?

Thanks in advance,
Paul
