Question Measuring Turnaround Time

I have an advanced Outlook/Office question.

We have set up several e-mail accounts which link to public folders which are used as shared inboxes for some of our support staff. We are looking for a way to measure how long e-mails are sitting in the inbox before they're being turned around. I can take a snapshot at any given time showing how many e-mails are in the box. I can also have the support staff manually tally how many they process each day. What I can't do is determine if the e-mail took 2 minutes, 2 hours or 2 days to process so I can generate a report showing what the real workload and service level is.

Can anyone think of any creative solutions? I'm open to VBA, Tasks, Journals, and just about anything else. I've been working ideas in my head all day.
