Default Add fields in Contacts in Outlook 2007

I want to edit the basic layout of the Contacts entry form to add and edit contacts. It looks like I should be able to do this, but the fields button is greyed out.

I have event created a new form in the hope that it is only the default one I cannot change, but this is no better.

I want to change some of the standard fields such as include home address rather than business address and add a couple of fileds to be used as selection fields for mail merge.

Any thoughts why this is the case?
