I use the Calendars in Outlook to track my assignments for uni. I was just wondering, is there any way that I can open an event in Outlook and have it link to a corresponding Office document?

So, for example, I have a business case due next Tuesday. Can I make it so that when I double-click on "Business Case" in my calendar, instead of opening the details, it opens the actual Business Case docx file on my computer that I've mapped to it somehow?

Yes you can put hyperlinks in a Calendar entry. When you get the reminder you can open the calendar item and click on the Hyperlink to open the file. Use this format:
file://D:\\FolderName\\FileName.doc
