I am not a technician so cannot advise you on the technical roll-out of Office 2010. However what I would urge you to do is ensure that any user who uses customised templates containing forms and macros have them backed up prior to the upgrade as there is a strong possibility they will be lost during the upgrade if not.
Nothing frustrates users more than losing tried and trusted templates and macros they have built up over time to make their lives easier.
