Office 2000 has never been supported on Windows 10. Even though you may have been able to get it running, it is liable to not have been fully functional and, more importantly, to have compromised your system's security.
As for the problem itself, that suggests the files concerned have been reinstalled in different folders than those to which the shortcuts refer. If you start Word and/or Excel, the application options can tell you what the default template folders are.
