Proper Procedure for updating Office 2000 to Office 2007 Professional

I would like to know if 1) I can upgrade office 2000 on XP machines to office 2007 professional or do I need to buy the full version.

2) Also, does anyone have a proper procedure including what to do with the Office 2000 PST files during the upgrade?
