I use the Microsoft Mailings tab to send emails out to contractors with job statuses. So say I have 10 fields for "Upcoming Projects", if the contractor only had (2) projects, the email would go out, and only show the (2) projects and nothing else.

A few weeks ago (maybe there was an update?) my emails started included the blank fields. So if the contractor had (2) projects, the email would show the (2) projects, and then (8) blank bullet points. When I "Preview Results" in the Mailings tab, the blank fields don't appear - only after I send the email (after viewing my Sent Mail items).

Is there any way to remove blank fields showing up in my email via Word or the Excel table I use as reference, or is this an issue that Microsoft has to correct?

This may be the result of a recent faulty Office update from MS. That said, you can suppress blank lines via field coding. To do that, press Alt-F9 to toggle the field coding display 'on'. Suppose you have:
{MERGEFIELD Upcoming_Project1}¶
{MERGEFIELD Upcoming_Project2}¶
{MERGEFIELD Upcoming_Project3}¶
where the ¶ is a paragraph break, and the Project2 & Project3 entries might be empty. You can recode them as:
{MERGEFIELD Upcoming_Project1}¶
{MERGEFIELD Upcoming_Project2 \f "¶
"}{MERGEFIELD Upcoming_Project3 \f "¶
"}
and so on. When you're done, press Alt-F9 again to toggle the field coding display 'off'.

Thank you for that! I'll try with my updates today. It doesn't hurt anyone, but it makes my emails look ugly!

So it looks like it partially worked. I have different sections that have blanks (Ongoing Projects, Bidding, Upcoming), and using the \f worked for any fields after the last in the entire document. See picture, so if it was:

Field with Data, No Data, No Data, Field with Data, No Data. The last "No Data" disappeared, but the "No Data" fields in between the "Field with Data" still show as blank.

Your image shows multiple fields with nothing in them after the \f switch. As shown in the example I posted, though, the trainiling paragraph break must be moved into the field code and enclosed in double quotes.
