Conditional Formatting

In column G, I want the cell to be highlighted green if the number in column C is less than one. How do I set up a formula for this?

Select column G and Add a new Conditional Format rule.
Choose a formula and set the Format you want to see
In the formula box put in a formula using the first cell that aligns with the top of your selection eg
=$C2<1
which assumes the first row of your selection is row 2.

Proceeding this way will format every empty cell also, especially when selecting an entire column ( which to me is bad practice).
You could (eventually) make your range an Excel table (allowing automatic extension of the rules) then click Conditional Formatting - Highlight cell rules - Between and enter 0 as lower limit and 1 as upper limit. Format as required

In column G, I want the cell to turn green if "bulk" is written in Column I, how do I set up this equation.

Range : col G - Condition =$I1="bulk" ( adapt ranges as required and don't use entire columns)
