I've been a market participant for few years and I started experimenting with making my own charts with excel.

I have a workbook and a screenshot attached to it.

Basically, I have a series of data. I got it from Yahoo Finance by downloading historical data.

From Jun 4,2020, I started manually adding data instead of downloading the new ones everyday from Yahoo Finance.

The chart in the work book is what I created. As you can see there's a weekend Jun 6,7 and the chart include their data as zero.

So, how can I skip over dates (weekends)?

Your problem in not weekend. You have entered Volume values as numbers and formatted the column to display them with comma as thousands delimiter. But for date 6/9/220 (with btw. is not weekend date, it is Tuesday!) instead number 35046300 you entered a text '35,046,30[0]'. For graph, Excel interprets it as 0 (any text in numeric column has numeric value 0).
