Default All excel files open simultaneously

Windows 7 Home Edition, MS Office Professional 2007 (SP3).

When I dbl-clk my desktop Excel icon, all my excel files open stacked upon each other!

My Excel Finances spreadsheet opens and displays, my Prescription record spreadsheet opens and displays, my reading list spreadsheet opens and displays, etc.

I don't know which event caused this nor do I know how to correct it.
