Default .pdf to .xlsx - How to get sort-able columns?

Unfortunately I'm only a novice in Excel... So that when I convert a .pdf to an .xlsx file... I don't know how to get sort-able columns. Help?

I'd be glad to supply either/both files if needed.

Thanks!
