cell number format defaults

I have several spread sheets I work on (and add to occcasionally) where the default number format in the cell is a date format. I'd prefer something else (e.g. xx.xx or xx.x%).

Is there a way to set the number format default for the new worksheets I start?

Is there a way to change the default cell format for existing spreadsheets.
