Color Pickers in MS Word

I'm an Excel & PowerPoint oriented person doing my first significant Word project. I'm trying to get a handle on the different color pickers in Word. I listed all the ones I found below. Can someone recommend some good documentation for my that describes which one is used for what and if some of them do the same, ect?

Text Highlight Color
Font Color
Shading (paragraph)
Shading (tables)
Shape Fill
Shape Outline
Drawing Tools>Shape Styles
Drawing Tools>Format>Text Fill
Drawing Tools>Format>Text Outline
