Default OL 365 missing features?

1. Contact form: the right side, text box is missing the narrow rectangular section at the bottom with a "Contacts" button to its left allowing for the selection and addition of linked contacts?

2. The Appointment form is missing this same box for linked contacts.

3. (Example illustrating problem): Open a contact, on the communicate section of the ribbon, click More then Task. The resultant Task form differs in a few ways from the Task form that opens within Tasks when Adding a Task:
a. 2 'checkoff boxes appear below the start/stop dates: 1) 'keep updated with...' and 2) 'send me status...'. I understand their significance to many and could easily live with these absent a way to remove.
b. IMPORTANTLY, there is no 'checkoff box' for a reminder nor is there an associated reminder date/time?????

I've searched and cannot find a way to toggle change for 1,2, or 3.

Is there none?
