It will also prevent anyone from editing the file without the password.
You can add a non-protected section for insertion of the signature. Again, though, the protected section will not be able to be edited.

A simple screen capture will allow copying of your signature, though. The basic rule is that if someone can see something, they can copy it. As you said, it may be made more difficult, but certainly far from impossible.
