It would not be wise to group lots of different information in one cell as this would make later analysis very difficult

To limit the number of columns you could use columns like

Date - Name - Daily Qty and perhaps some others

not one column per person

Then, with proper formulas- Pivot Tables or other means, you can extract the information you need quite easily if your columns are well thought.

First think about what you will need in the end, then think about the way to obtain it
