Once again I embarrass myself. I used those less than a month ago, I was at that site less than a month ago, but I couldn't remember either! Content Controls were not showing up as I was trying to edit a form created in an old Word release and so the doc kept opening in "compatibility" mode and wouldn't update when I saved it, so I copied and pasted the text onto a new doc blank and voilà! Content Controls are available!

Greatly appreciate the help. I would have just driven my blood pressure up. Will make a good bookmark this time.
