Start by displaying table gridlines. This is on the Layout tab under Table Tools (left end of ribbon). Once you show the gridlines, you can click on a cell border and move it to adjust your spacing. The table does not have to fill the entire width of the page. You can make the left cell right-justified if you want.

Centering cells vertically (aligning contents) can be done on the right-click menu. See below.
