As extended support for Office 2007 Enterprise ends on 10/10/2017 and Microsoft will soon be rolling out Server 2016, I'd have to wonder why you'd be trying to upgrade to Server 2010 and hanging on to Office 2007 at this stage.

Can't answer your questions, though. You might be able to re-sell the Office 2007 Enterprise licenses on fleabay, but its limited support might mean there won't be much interest.
