Default Categories (2010) - how to edit drop down list for assignment to contact

When assigning a category to a contact, with contact form open, there's a category button on top that produces a drop down list of recently used categories (I'm assuming it's recently or maybe it's most often used) from which to choose or the last choice which is All Categories.

Is there any way to edit or clear this short cut list? The first 10 listed are ones I have not used in over a year and don't intend on using.
