Easiest is to insert an 'Address Block', but inserting fields one at a time is still easy.

It sounds like perhaps you aren't typing the characters (spaces, etc) that should separate the fields. For example, you might:
Insert FirstName, then type a space and then insert LastName, and then press Enter
Insert Address then press Enter
Insert City, then type a comma and a space and then...
