Default Showing Actuals on a Completed Task

Background: I have a team that is working on being better at estimating work for projects. We are a leveraged tem, so I seperate status using both work (8 hours) and Duration (6 days).
Problem: Right now I need to show our Estimated work (original hours) vs What we actually worked for that task (actual work), simple enough except, I am trying to do this while have the task completed = 100%. SO example would be task 1 Work (estimated) = 8 hours, actual hours = 6, with task 1 being complete (100%). I need the % to be updated for over all project status. our Project is 25% done and we are currently +/- hours to date from what we estimated. How do I do that?
