Default Quick Question on Pivot Tables; how to

How does on reorient a Pivot Table or produce a report to show how many times an item appears in the file across all columns? So, if I had a list of companies, and wanted to log which companies had health insurance plans, and which of those companies which had health insurance plans had further particular aspects (smoking cessation programs or yoga, for example) and where in the official documentation for these companies the reference to said aspects stood documented. I documented this information as the name of the company in the first column, the second column featured the aspect, and the third column the documentation for the aspect. Obviously this would repeat for subsequent columns for subsequent aspects (except of course the name of the company). How would I use a Pivot Table to return the number of times a company in the file had a smoking cessation program?
