When you create an Excel object in a Word document, everything will be scaled to whatever size it would normally be in Excel. Consequently, you may need to adjust the inserted object's size by right-clicking on it and using Format>Object>Size to change the scaling. You can also adjust the embedded object's font sizes, column widths, row heights, etc. to get the sizing you require.
