How have you inserted the Excel table?
I would suggest selecting the table in Excel, then use Paste Special > Bitmap and check the link check box.
This will insert the table as a graphic that you can scale to fit the available space. Any changes you make in Excel will be reflected in the document and the size will not change. You will not be able to edit the table in Word.
