The size of paper that you can configure accurately in Word is determined by the printer driver, which is an essential part of the process. If the size is not listed, the driver will substitute another standard size.

You can create a new 'form' size from Windows Control Panel > Devices and Printers. Select the Printer and you should get an option - Print Server Properties (Windows 8 dialogs are slightly different from Windows 7 which I have here) - from which you can create the 8 x 10 form size and thus allow you to select it as a page size in Word, which should produce better results.

The left and right page options can be configured from Page Layout > Page Setup. Click the arrow in the bottom right corner of the ribbon group and you will see another dialog. On the Layout tab you can set different odd and even headers and footers and from the Margins tab you can set the Gutter which will give you the additional margin space left or right.
