Default Windows Easy Transfer/Office 2007 Outlook known flaw

All guides to upgrading to Windows 7 all recommend using Windows Easy Transfer be used to minimise problems of software and other settings after loading Windows 7.
I have upgraded from Windows XP, SP3 to Windows 7 Professional (32 bit) and in general Windows Easy Transfer worked. However, I have found that there is a serious fundamental flaw with Windows Easy Transfer when loading Office 2007 Outlook. Whilst trawling the web there is clear evidence that this known flaw in Windows Easy Transfer involves fatally damaging/scrambling the Address Book .pst file!
Fortunately I took the precaution of installing an additional HDD so my original HDD containing a fully functioning XP based system has not been reformatted as part of the Windows 7 installation process, i.e. I still have a fully functioning Office 2007 Outlook facility. How can I successfully transfer this Address Book without using Windows Easy Transfer? Without this Book, even though all other aspects of Outlook 2007 work OK with the new Windows 7 installation, (including successful transfer of my old gmail and Hotmail e-mails, all of which I wish to preserve), I would find Outlook virtually impossible to use.
I would be prepared to manually re-enter all my address book entries if really necessary, but the Windows 7 Outlook installation won’t even let me do this – something about a new Profile being needed.
HELP – I am sure that I am not the only reader with this known problem and there will be more as Windows 7 is increasingly adopted.
