Thanks Julie, I think that's some of what I require. Learnt something new with the custom fields bit from your response for sure.

However, a custom field like this lists all the resources with their percentage allocation and then the total work.

I'm after something more like task usage as you suggest - where the work in hours is against each resource rather than a percentage. But I'd also like to keep the gantt chart view.
