If Customize took it away, Customize should be able to bring it back. I don't have that version of Word, so I'm ad libbing here, but you should be able to access it by something like:
Tools - Customize - Menus
Then choose the Table command and find the Convert text to table command. Drag it to the Table menu
Same for any other commands that have disappeared.
