Sorry to tell you but easily customizable toolbars are a thing of the past.
There is the QAT, though, which is easily customizable. See
Modifying the QAT and Ribbon in Microsoft Word. I would recommend storing any QAT customizations relating to macros in the template which contains the macros.
Beyond that, you can customize the Ribbon (outside of the Word interface) and create your own custom Ribbon tabs and groups. If this is only for you, you can use the Interface to do this. Otherwise, you will want to edit the XML directly. See

Finally, you could take a template containing your old toolbar and macros and put that into the Word
Startup Folder. That would give you access to your old toolbar under the Add-ins Tab.
