Word wants something formatted using the Strong style before it will refer to it. (StyleRef) You did step 2 fine, but step 1 is required to get our result. In your actual document, not this practice document, you will want to create your character styles and apply them before creating StyleRef fields that try to find them.

In this case, once you have applied the Strong style to some text, go back to the error message and press the F9 key to update the field.
