Try pressing Alt-F9 to toggle the field code display off.

PS: Regardless of whether the field codes are displayed, this has no bearing on whether the merge works. Any suggestion that it's not working implies that you're Previewing the merge rather than Finishing it. Mailmerge Previews are not a reliable indicator of the output once you get past using just the basic mergefields.
