You can have Project calculate variance off any single baseline by changing the Earned Value option in File > Options, Advanced.

Sadly, you cannot show multiple variance calculations at once, but a ProjDateDiff function in one of the spare Duration fields can allow you to calculate and show variances against several baselines.
