Default Customizing keyboard in Outlook

I switched to Office 2010 this past summer, and have just about gotten used to the ribbon; I'm no longer tearing at my hair in response to it, at any rate. But Styles still drive me crazy; they don't do what I intuitively believe they should. So in the light of my failure to figure out how they're actually behaving (instead of how I think they behave), I finally decided I'm just going to have to break down and create a few macros to set the font, color etc, and then attach those macros to a key so I can use them conveniently.

But wait—how do I attach a macro to a key? I used to be able to do it, but I don't see that mentioned in any of the new menus, or in the documentation. Is it something easy that I'm missing?
