To select the multiple sheets, simply hold down the Shift or Ctrl key whilst clicking their tabs:
Shift lets you click on the first/last of a series and span all of them;
Ctrl lets you choose individual sheets to group for the action.
To add header/footer items in Excel, go to Page Setup>Header/Footer> Custom Header/Custom Footer and choose your Left, Center and Right content. Note too that you can have a different first page and different odd & even, just like in Word.
